If he’s not interested in that — he will never discover, but if he IS interested in AI — you’ll just limit his education and research.

Personally I'd block their access to AI until they'd left school or legally became an adult (whichever happens first).

My son is almost 11 years old.
As many other "hot subjects" such drugs, porn etc, I always prefer to talk and to give him orientation. It's not different with AI (including ChatGPT and similar).
I didn't find AI a difficult subject to deal with him, because we (he and I) have a robotic project, and one of the jobs includes the use of programmable circuit board (microcontroller) + AI.
Of course, I always point to him "pros & cons", so he is aware about potential AI dangers. And I trust him. That's it! I give info + orientation, I focus on strengthen his responsibility, I trust him... and the rest is "c'est la vie".
I do the same with subjects related to drugs, porn etc.
But of course, each case is a different case, I'm aware that I have a very special relationship with my son, and what works for me and him might not be a solution for everybody.

Just explain he should take has answers as wrong but that tool is really useful even if many times misleading

If you don't teach them and show them how to use it responsivelt then someone else will. At least you can be the first to present the narrative and let them form their own opinions. It is unavoidable.

I envy my parents they didn't have to worry about me learning about porn, drugs and AI while browsing the Internet when I was young! When I was a kid we learned about porn and drugs from our friends on the street as any other kids of those times would.
