Plus and Classic have the same core components.... this means ALL Security fixes as well as ALL Compatibility improvements always apply to both equally.
The used UI has no effect on security, compatibility or performance.

If you're long time Sandboxie user....you may feel more comfortable with Classic UI. If you're new user....I'd urge Plus UI...since, developer wants users to embrace Plus UI.

Plus & Classic builds share core components. Sandboxie-Plus (installer) installs shared core components to Sandboxie-Plus folder. SandboxieInstall (installer) installs core components to Sandboxie folder.
Plus users may run Plus UI or Classic UI.
~for example:
I install Plus build and have Plus UI - SandBox Manager & Classic UI - Sandboxie Control pinned to my taskbar. I usually run Classic UI in my system tray. Just me.

I have been using Sandboxie-Plus last time some weeks ago, there was one major issue: sandboxed windows-explorer was broken and crashed (soon fixed by the Dev) but after that I chosen to install Sandboxie-Classic again and kept it. I'm using it only for one reason it's a kind of virtual-desktop.

My extracted Sandboxie+ 0.6.7 for portable use....folder/files....deletes same as any portable.
Have you experienced Sandboxie+ portable use folder....that did not delete same as any portable?

Yeah....I'm hesitant to reply because I'm not understanding your use of "uninstall".
My extracted for portable use Sandboxie+ 0.6.7 folder pics. My chosen destination location for portable use is Desktop folder.
Note: 0.6.7 is the only build that I've run extraction. I don't know if earlier builds had issues. I've run extraction for portable use (as test) on my daily use machine with Sandboxie+ 0.6.7 installed. I called portable Plus UI / Classic UI same as I call installed Plus UI / Classic UI. Portable is using Sandboxie.ini from my installed Sandboxie+ 0.6.7.

Well, I'm not running + portable as my daily rider. I only ran extraction, as test. My Edge from + portable appears to run the same as my Edge from + installed. I've called Delete and Recover against my + portable folder, as test. Sorry, I'm not understanding your use of "uninstall".

+ portable is not installed like a program which would be installed.
+ installer is extracted to a folder and + runs from that folder.
+ portable does not have a built-in uninstaller like + installed.
Please review my pics #12 & #13.
Please satisfy yourself.... run + installer extraction.
Please correct me.
