Pixel 6a is your friend for less than $300 (sale price). Only downside is no microSD card expansion.
I am going to upgrade soon. But probably to something a bit cheaper.

The good thing is you root your phone (I'm not up to date on rooting or how far it's advanced), so I guess less of a worry?

Unfortunately rooting by itself makes no difference. But there may be some privacy tools which can block access to tracking addresses.

There are steps to take to block/delete trackers with rooting. Rooting allows this opportunity as compared to non-rooted phones

1) Root the phone
2) Install apps with no trackers

3) Use Warden or App Manager or TrackerControl to block/delete trackers for rooted phone from Droid-ify
