Do you set up Group Policy ?

Technically, yes. Using Group policies via registry on Home, I would not use Edge without it. Policies are respected, unlike user's settings.

So do I most of time, but occasionally I have to review a thesis or a research article.
I dislike being interrupted by unplanned update; can easily forget what I was going to modify during the update period.

A thesis?
Do you have multiple degrees?

Windows update cab be annoying enough when interrupting workflow.
A less "intrusive" solution would be setting the network as metered whenever you have work or pausing the updates for a week. That makes sure you never miss critical security updates.

Another option is to manually download the updates from Microsoft Update Catalogue
