This question is about sending your biometric data to your Bank's database, and whether you trust your Bank with this data.

Here's an explanation:
Biometrics is a term used for unique physical characteristics such as a fingerprint or your face. We use the latest technology to process the photo of your face and create your biometric data. ... The actual photo of your face is not biometric data.

So to reiterate, it's the processing of your face photo to create biometric data that will be stored by the Bank, alongside your original photo.

Is it not the biometrics (Fingerprint / Face) used to unlock your Bank app, which is managed by your phone's security chip.

Indeed, the biometrics used to unlock your bank app are typically managed by your phone's security chip. However, some banks may also store your biometric data on their servers for additional security measures. Trust in your bank's database security with your biometric data ultimately depends on their security measures, data handling practices, and compliance with privacy laws.

The banks are more interested in limiting their liabilities/expenses and maximizing profits more than keeping account holders' secrets; if they don't leaks those directly, their supplies would do it for them. Zero trust for these institutions; avoid whenever you can.
