Any suggestions on how to improve my config?
I'm looking to replace Windows Defender.

Positives to start with! You're using uBlock Origin, Startpage as your default web browser, using CFW to sandbox your web browsers! All of this is great now on to what you add to your config.

Things you could add:

• Could change Privacy Badger with Privacy Possum
• Add Zemana AntiMalware & Emsisoft Emergency Kit as on demand scanners
• Alongside WD & WF you could add OSArmor & Voodooshield

Will definitely check out Privacy Possum. Thanks for reminding me of Zemana and EEK!
Adding OSArmor, but is Voodooshield actually needed while running CFW?

I'm looking to replace Windows Defender.

At first tweak your system with NVT syshardener. You may use Kaspersky free+NVT Osarmor combo to replace WD. Use good second-opinion scanner. Btw comodo along with kasperky won't be a good experience. If you are ready to ditch comodo, then you may use binisoft firewall. You may try simplewall firewall also if you are ready to train it. It's portable & can work along with another firewall.

change you user access control to always notify. or at least to "don't notify when I make changes"

add decentraleyes,Cookie auto delete & a good pop-up blocker- I hope it won't be heavy for your system.You may try privacy possum extension.

So far this is what I have done: Hardened Windows with NVT SysHardener. Installed Zemana AntiMalware, EEK and OSArmor. Switched to Privacy Possum.

Considering whether or not I should add Voodooshield as recommended by @LDogg.
Quite satisfied with CFW so I don't think I will go with Kaspersky and Binisoft/Simplewall @yitworths.

Create and use LUA instead. Helps alot. Also have a periodic system back-up and a bootable USB drive in case emergency happens.
On-Demand scanner is good to have. Since u are using Pro version, maybe can try use bitlocker feature too.

I'm already using Veracrypt for full-disk encryption.

Enable UAC, it can be fundamental to prevent infections.

Add ZAM Free, EEK and NPE.

Add Macrium Reflect Free or AOMEI Backupper.
