My current daily driver is a Galaxy S10e running Pixel Experience (userdata is encrypted as well as enforcing SELinux), not installing apps from 3rd party sources unless they're open source as well as keeping good internet habits has always worked for me. On public WiFi networks I always connect to my own Wireguard VPN that's running on a RPi 4 at home.
