Live USB or Install USB

Any differences and advantages between those two methods?
I intended to create an OS USB drive either with Ubuntu or Fedora. Tried Porteus, doesn't like it.

Live = you can see and try and install.
Install = only install, you can see it live.

Okay, I believe Live USB should fit me better since I'm intending to use it for travel and portable wise.
Another quick question.

If I use Live USB and i type some document (e.g.), can it be saved into the same USB drive? Or I would need another thumbdrive for that?

@CMLew: Your documents will retain as you place on your same USB Drive since its an isolated already from OS that run on current state.
