A notification from the Panda firewall that the uninstaller program Soft Organizer was receiving an incoming connection from the Internet. Is that something I should have blocked or could there be a good reason for it?

These program connects to the internet to:
1) Check the license(if its paid)
2) Check for updates like sir Robot mentioned.
3) Ahem.. Improve the user experience..
4) Check the database or something like that. In case of Revo Pro, happened to me once. It downloaded some database file to clean the remnants of a certain program more effectively.

These days there are few programs that are not phoning home for something. If you set an app to watch connections there is almost constantly something or another trying to communicate out. Yes - I know it is surprising. But fact of life. E.G. Chrome browser even when not "running" may have 3 or 4 apps dialing out. Some Settings can control this - some not. In the latter case, if it bothers you they can be blocked with outbound controls in a firewall.

My ESET firewall when I had ESET indicated even more so an absolutely astonishing number of attempts to communicate in to my home computer. What would you say are the best applications to set to watch connections?

You have an XP box. No firewall now? Private Firewall still works well on XP and other machines though no longer developed. It has good HIPS and allows a LOT of control. If that is what you are looking for. You could also use a sniffer for more detail - Nirsoft has a good one that is fairly simple to use - SmartSniff.

Simpler is something like KCSoftwares PortExpert or Nirsoft CurrPorts.
