Safety Check is an iPhone settings flow for reviewing access to your information and stopping sharing with people and apps. It also helps review connected devices and some Apple Account security details.
Manage Sharing & Access allows a selective review;
Emergency Reset is a broad, urgent change.
A useful example
You once shared your location with a former housemate. A selective review can find and stop that share without automatically ending unrelated arrangements. If immediate safety requires stopping all supported sharing, Emergency Reset may be appropriate. Apple's

The boundary
Safety Check cannot revoke every account, password or social-media share. Changes may be noticed by other people when location or shared content stops updating. Consider your physical safety and review non-Apple services separately. A managed or restricted iPhone may offer fewer options. If you need to preserve evidence of unwanted access, record relevant details before removing a sharing arrangement.
