If a user opts for GrapheneOS, then the logical apps that people would use would be the ones hosted in FDROID.

Same concept when I used Lineage OS without google services. Nearly all the apps were from FDROID.

Email: FairEmail from F-Droid (over IzzyOnDroid repository)
Launcher: stock
Sms: stock
Chat: Telegram from F-Droid
Music: Vanilla music from F-Droid
Notes: self chat in Telegram
Photos: stock. Sync with Nextcloud from F-Droid

Video chat: none
Web browser: stock
YouTube: NewPipe from F-Droid because of annoying YouTube ads on their site
