Tested that generator from schneegans in a VM and it works well.You can customize the windows ISO and bypass the restriction using Answer files (unattend.xml) which is legit Microsoft function. There are lots of GitHub .xml configurations freely available or you can create one by yourself from https://schneegans.de/windows/unattend-generator/.
