Serious Discussion Unusual cell phone activity

Received an email from my cellular carrier, Consumer Cellular, that I was approaching my Data limit. This is VERY unusual since we hardy ever use our iPhones. I went into my account and discovered that over 700mb of Data was downloaded? or something at one time. What was really strange is that this, on my wife's phone, happened at 6:00 in the morning while she was asleep. Does anyone have any idea what might have happened?

I searched all the usage for apps on her phone and did not find anything unusual, also no spikes in battery activity.
Again, any ideas?

iOS can download and install updates automatically, but there's a catch: your wife's phone needs to be charged and connected to Wi-Fi overnight. Was this the case for her?
No. I had already updated her phone a couple days before, I always do all my updating on all devices manually.

Ok, it happened again early this morning.

Let me ask everyone this, is it possible for someone to "spoof" your number or however it might be done, and use your phone number to download a ton of material onto THEIR phone? Again, use your number on their phone, it that even possible? Should me wife contact our courier and change her number?

I'd look for other answers rather than spoofing, iPhone can install silent updates but this is not the norm. Bluetooth on? That would be first on my list.

iPhone I doubt compromise unless high value target but anything is possible? Courier data would be my second bet. Sometimes your provider sucks a lot of data.

Your WiFi could be compromised and somehow they are using that for pairing/mirroring your device to another device.

Why not back up photos and data and reset? If you've gotten to this point it may be a good option.

Did you check under cellular in settings to see data usage by app? Maybe that'll show what might be using it.
