Several scripts / tools are available for doing this, better is to use the Origin version, but not free on Windows, i would never touch these tools, because an update can breaks lot's of things, especially when the main branch version is upgraded 155>156>....., with good policies settings you can already cut lot's of features in regular brave browser.
Does this also apply to Microsoft Edge? I used a third-party script to disable some policies, but I don't know if that will cause problems. Another question: Will known tools that modify system registry/policy settings cause problems on Windows?

Please forgive me for answering your questions as well.

I’ve always entered policies manually.
In my opinion, it’s easier than using third-party tools.
You won’t run into system issues when the policies you choose to modify are browser-specific.
Usually, you choose policies that enhance privacy and security and reduce annoyances.

You can’t get the most out of Edge without using policies.
In my opinion, Edge is the browser that most needs policies; the browser that least needs them is Firefox (as @Marko :) has already pointed out).
