I'm wanting a quad core at least 3 GHz so probably an i7 of some kind

i7's are pretty expensive compared to others. an i5 will do you good but considering that you're on a budget, an AMD FX-6300 should meet your needs without any problems.

Then go for a board that supports the AM3+ socket. An FX-6300 is better than multi-tasking, encoding, video editing and gaming than an i3 within its price range. You won't regret it.

Just go for the first AM3+ board that you mentioned. Just go for a single 4 GB stick. The Kingston Hyperx line is pretty good.

the computer is only 2 years old though.
