How would I go about changing the font color to match or somewhat blend in to the grey part of my desktop?

Easy to do, Right click on the style and click Edit, It will open the config file in Notepad, You'll just have to find the color code used for the font and change it to a color code that you need.

Are there any Windows 8 RTM themes that are in dark Grey? Take ReviewsAntivirus one for example but in dark grey/nearly black just like NOOTO

You will have to save it though as a BMP for it to work. Can't remember where the link of the website I got it from, but gave you the picture. :)
