I currently have GSB enabled on the following:

NextDNS (default option)
- NextDNS claim that they strip privacy stuff from their lookups.
ESET
- I believe this that they are the GSB source
Google Chrome
- GSB enabled by default.

My question is can I turn off NextDNS and Chrome without compromising performance?

You're right. I don't know if ESET provide Google with bad extension list, but I'm pretty sure that the bad-URL list is not provided by ESET.
AFAIK Eset's components are run only as on demand scans and do not provide any real time protection. They check for bad extensions and other unwanted software...
