I also have a hard time figuring out what the benefit is.

A Content Delivery Network is used to deliver content from a server close to to you (reducing network time). So you might visit a website in Australia while you are living in say south of Denmark. The CDN could choose a server in Hamburg to deliver the content of that Australian website because that Australian content is mirrored on all servers of that CDN.

I understand that this extension intercepts the CDN request in Denmark and tries to find that content locally (meaning in Australia), increasing the load time of teh content.

CDN is content delivery network. Most websties use 3rd party CDNs to deliver parts of their content, like fonts, etc. but CDNs are also used for tracking purposes. Some CDNs are tracking only. LocalCDN replaces many of them (more so on Firefox) with locally stored content instead or else simply blocks the CDN.
