Leaving UAC on is very important since UAC is a very competent anti-executable that's usually your last preventative measure. You shouldn't disable it. To alleviate the issues you have with UAC, you should;
1) Set up your PC with UAC off, THEN turn it back on. This decreases annoyances.
2) Keep UAC while installing new software you encounter or opening software that needs admin rights. A few dialog boxes here and there are not annoying.
3) Use compatability tab to shift apps to open in admin mode by default for required software.
