The author of above video mentions some privacy concerns in regard to creating an account with NextDNS, but ....

You don't need a real email address to use the FREE service with an account and privacy policy of NextDNS looks quite decent: Privacy Policy - NextDNS

Every DNS out there logs data, even no-log like Quad9 or Cloudflare, because of DDoS protection and they mention it in their Privacy Policy. The only difference is, how fast they remove logs, some after 2 hours, some after a few days. It is like arguing whether you should have Google/MS account, if you do not, they will log your data, if you do, you can remove it at your discretion.

fwiw from US, I checked my quad9 with dnscheck.tools and Ed25519 algorithm gets x instead of green checkmark &
"Your DNS responses are authenticated, except when using newer DNSSEC algorithms"
I sent quad9 support an email. Other dns servers get all green checkmarks.

It's a configuration issue not a DNS issue
Follow their guides to configure it correctly I'm using quad9 and it works perfectly and has better ping then google , cloudflare in my location

I meant that quad9 gives me better ping (lower latency)and it obviously depends on location

the answer to my Quad9 Ed25519 issue is (according to support) I was using 9.9.9.11 as the little I read said "threat protection" or more threat protection? But 9.9.9.11 does NOT support Ed25519 but 9.9.9.9 does, so I tweaked and now all green checkmarks to (or again).

So indeed you have used a non default config of the DNS
